4. Coat the marinated fish with starch, making sure to coat the gaps as well. Shake it off and turn the fish tail over.
5. Heat the oil in the pan, put the fish meat side in first, turn it over after it is shaped, fry the fish until crispy and remove it from the pan, and also fry the fish head.
6. Leave a little oil in the pan, pour in tomato sauce and stir-fry, then pour in the prepared sweet and sour sauce (sugar, vinegar and a little starch), then boil until thick, and pour the sauce on the fish.
